According to Ayurveda and yoga, taste of the food is very important. Taste is derived from the Sanskrit word Rasa meaning experience, enthusiasm, essence.
Rasa means the essence of life and it affects every aspect of our being from structure and physiology to our overall state of mind and consciousness.
Our ancient practices of yogic sciences see the rasas/tastes as tremendously powerful therapeutic tool that determines not only how we experience our food, but ultimately, the overall flavor of our existence.
Dosha is a Sanskrit word meaning ‘fault’. All Most every physical and mental diseases are caused by an imbalance in dosha. There are 3 types of Doshas- KaphaVata and Pitta. Each of these dosha governs certain functions and aspects of human body and must be balanced in order to achieve physical, spiritual and mental wellbeing.

The doshas are natural energies found all over the human body and mind. They govern all physical and mental processes and provide every living being with an individual blueprint for health and fulfillment.

Inter-Relation between Taste and Doshas

Taste is made up of the same five elements that make up the doshas that are space, air, fire, water and earth. Each of these tastes has effect on the Doshas- Vata, Pitta and Kapha.
When your doshas are out of balance, these six tastes can help you repair this imbalance. The six tastes are Sweet (Madhura)Sour (Amla)Salty (Lavana)Bitter (Tikta)Pungent (Katu), and Astringent (Kashaya).
